Directions
To prepare oven, pan:
Preheat oven to 350 degrees F (175 degrees C).
Lightly grease a 9x5 inch loaf pan or 4 mini loaf pans
To make bread:
Using electric mixer, cream butter until smooth and fluffy
Add sugar.
Cream together for 2 minutes
Add eggs, 1 at a time
Mix bananas until only small lumps remain.
Add bananas to butter, sugar, eggs mixture
Stir dry ingredients together
Mix into banana mixture just until combined.
Pour batter into prepared pan
To make topping:
Combine nuts, sugar and cinnamon
Sprinkle over batter
To bake bread:
Bake bread for 65 minutes until toothpick inserted into center comes out clean.
Cool in pan for 10 minutes.
Turn out onto wire reack
Cool completely before wrapping tightly for storage
Also makes 4 mini loaves. Bake at 325 for 30-35 minutes
