Directions
Wash and drain rice
Spread in a 9 x 13 baking dish or 3 quart casserole
Mix soup, Italian dressing mix, and water
Stir into rice
Lay chicken, skin side up, on top of rice mixture
Season with salt and pepper
Cover tightly
Bake for 1 hour at 350 Uncover and bake for 20 minutes longer until most of liquid is absorbed and rice is tender Put under broiler for a few minutes to brown chicken

1 cup uncooked rice1 can cream of chicken, or cream of mushroom soup1 envelope Good Seasons Italian dressing mix2 cups boiling water2 1/2 pounds cup-up chicken or chicken breastssalt and pepper to taste
