Oven-Baked French Toast with Mixed Berry Sauce
Directions
To prepare oven, baking dish: Preheat oven to 375 degrees. Lightly coat 9-by-13-inch baking dish with cooking spray.
To layer bread: Arrange enough whole bread slices in single layer to cover bottom of dish. Cut remaining slices in half on diagonal. Arrange them in overlapping rows on top. (Note: You should have 3 rows of bread triangles.) Set aside.
To prepare egg mixture: In medium bowl, whisk together sugar, cinnamon, baking powder and nutmeg. Whisk in eggs and vanilla until well blended. Gradually whisk in milk. Slowly and evenly pour egg mixture over bread slices. Let soak for 5 minutes. Using fork or spatula, gently press down on bread to ensure it is evenly soaked.
To bake: Bake for 30 to 40 minutes or until French toast is puffed. Sprinkle with sugar. Set oven to broil. Broil French toast until sugar is melted and bread is lightly browned. To make sauce: Meanwhile, in small bowl, combine lemon juice and cornstarch. Set aside. In medium saucepan, combine berries, sugar, water and salt. Bring to a boil over high heat. Reduce to a simmer. Stir in lemon juice mixture. Simmer, stirring often, for 2 minutes or until sauce thickens slightly. Cool. To serve: When French toast is finished baking, top with berry sauce and serve immediately.

- 16- to 20-ounce loaf sliced white bread, ends discardedÂ
- 1/3 cup granulated sugar, plus more for sprinklingÂ
- 1 teaspoon cinnamonÂ
