Directions
Sift together flour, baking soda, baking powder, salt and cinnamon.
Add sugar, oil and eggs.
Mix well.
Stir in carrots, pineapple and nuts.
Turn into a greased and flowered 9 x 13 pan.
Bake 40 minutes at 350.
Frost with cream cheese frosting

Cake:
- 2 cups flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 cups sugar
- 1/2 cup oil
- 4 eggs
- 2 cups grated carrots
- 1 (8 oz.) can crushed pineapple (drained)
- 1/2 cup chopped nuts (walnuts/pecans)
Cream Cheese Frosting:
- 1/4 cup butter
- 4 oz. cream cheese (1/2 8 oz. package)
- 1/2 tsp. vanilla
- 1/2 pound powdered sugar
Combine butter, cheese and vanilla. Beat well
Add sugar slowly and gradually. If too thick, add small amount of milk to thin to spreading consistancy.
